Definition: 
Meal Preparation: “The ability to safely prepare meals ahead of schedule to meet the basic nutritional requirements.” 

Meal Preparation Procedures:
When you are not actively cooking or on your break, your task is prepping. Prep work (or preparation work) is very important to avoid waste by producing the wrong quantity, maintain consistency in food quality between cooks, and complete tasks that help prepare for the cooking to start. Prep work can be done as early as a month in advance and as late as an hour before cooking time. Various tasks have different times of preparation. The following is a list of prep work examples, including but not limited to: 

  • Cleaning, organizing, and sanitizing the kitchen. 

  • Take stock of items and identify any ingredients that need to be restocked. 

  • Sharpen knives. 

  • Review the menu, recipes, recipe videos, & portions. 

  • Wash produce. 

  • Chop produce. 

  • Prepare food one day in advance (such as bread). 

  • Prepare food one month before storing (such as broth, soup, or chili). 

  • Move ingredients from freezer to refrigerator the day before use.
