Purpose:
To establish standards for safety, hygiene, efficiency, quality, and professionalism within the kitchen environment. These rules help prevent accidents and ensure food safety, promote smooth operations, maintain consistent quality in food preparation, and set clear behavioral expectations for all staff members.
Scope:
Includes standards for food safety and hygiene, proper equipment use and maintenance, workplace safety, and workflow organization to ensure smooth operations. It also covers quality control guidelines for portioning, presentation, and consistency in dishes, as well as expectations for staff conduct and professionalism, including punctuality, teamwork, and respectful communication.
Definition:
Kitchen: is a designated space or room used for preparing, cooking, and storing food. It typically contains appliances like stoves, ovens, refrigerators, and sinks, as well as tools and utensils necessary for food preparation.
Rules: are specific guidelines or directives established to control behavior, actions, or procedures within a particular environment.
Kitchen Rules
Timely
Arriving to work and from breaks on time is critically essential. Contact your supervisor in advance if you are running late or can not come to work. Disciplinary actions will be taken if you are tardy or absent without notice.
No Idol Hands
Stay focused and on task during work hours. If you are without a task, please show initiative and ask for direction from your supervisor. When not cooking, you should be cleaning or preparing food for that evening or the following day. Ephesians 5:15-16.
Hours of Operation
No persons should be allowed in the dining area outside of dining hours. Staff should only work during their scheduled work hours.
Purchases All purchases must be approved by your department supervisor. Items must be purchased on the same day funds are released. All purchases require a receipt. Receipts and change must be turned in on the same day of purchase.
Theft Prevention
No items or food are to leave the kitchen for any reason unless approved by the Department Manager. Raw goods, kitchen utensils, or other kitchen items should never be taken home. Any meals taken home must be a single portion in your own container and must have an ITEM AUTHORIZATION FORM signed by your supervisor or the Campus Residence Director.
